Though we’re technically a few weeks away from the official start to summer, it’s been warm enough that we’ve been grilling outdoors on the gas grill. We also just completed a massive backyard remodel over the past two months and converted the entire space into an edible garden. 

I recently got to try out these lovely red cedar planks from Wildwood Grilling. on my grill and they’re a great way to add a depth of smokiness to your meat and vegetables when grilling. You presoak the wood for at least an hour and then place it on the hot grates, as the wood starts to warm up and burn it releases it’s aroma which gets captured by the food resting on it. Wildwood Grilling also makes a large variety of planks to choose from; there’s alder, cherry, maple and many more to play with! The final result is a patty that’s much juicier with a smoky flavor.

This is my go-to-burger/slider recipe when I need to whip something up quickly. A bit of garam masala with mint bring the warmth and coolness to the meat. I strongly recommend, sautéing the onions first, it adds more flavor and a bit of sweetness. As for fixings, I usually like a good thick tomato slice on a toasted buttered bun, lettuce and chipotle mayo and a bit of feta or sheep cheese. But feel free to use whatever fixings you love. This recipe is highly adaptable. You can also shape them much smaller to make sliders which would double the number of final patties.

mint and garam masala patties

makes 6 patties


2 tsp olive oil

1/4 cup minced onion

1 lb ground beef 

1 large egg

2 tsp dried mint

1 tsp garam masala

1 tsp red chile flakes

1 tsp fine sea salt

Soak two cedar planks in tap water for at least 1 hour.

In a small pan, heat the oil and sauté the onion till they just start to turn brown for about 4 to 5 minutes on medium heat. Transfer to a large mixing bowl and add the remaining ingredients and using a fork or clean hands, mix to combine. Divide into six equal parts and shape them into 1 1/2-2 inch patties. 

Heat the grill  on medium-high to about 475F and place the cedar planks on the grates. Place three patties on each plank and cover with the lid. Cook covered for about 15 minutes or until done. If you want grill marks, transfer the sliders to the hot grates and sear for about 40 to 60 seconds on each side. Remove and serve with fixings! 


Note: You can also do this over a grill pan on the stove for those of you that own a grill. Another option is to soak the wood in water like instructed and stick it into your oven at about 400F (I find that to work well to get the wood to smoke a little). Just remember to ventilate your kitchen well.
