Lychee Pastis Refresher

I’m headed to Marseille in France this year for my summer vacation to relax, and this lychee Pastis refresher is the only thing I need to take with me besides my luggage. Pastis is made with herbs like fennel, anise, star anise, and licorice, and this one is called the Milk of Marseille. You need only lychee, limes, water, and mint. Chill, and then give it a good bubble infusion with the Breville InFizz Fusion. I’m going to serve it all summer long.

  • Yield: 4 1/2 cups/1 L

Ingredients

2 1/2 cups/600 ml liquid from two 20 oz/565 g can lychees

3.38 fl oz/100 ml fresh lime juice

3.38 fl oz/100 ml Pastis de Marseille (Ricard)

300 ml chilled water

Fresh mint for garnish

Pitted lychees for garnish

Instructions

  1. Mix the lychee liquid, lime juice, pastis, and water in a bottle. Refrigerate until chilled.
  2. Serve over ice. Garnish with fresh mint and a lychee.
  3. If carbonating the drink, follow the instructions listed in the manual for the Breville InFizz Fusion, which can carbonate any beverage. (Please check with manufacturer instructions when using other products.)

Notes

  • To make a non-alcoholic version, replace the pastis de Marseille with Pacific.
